Khychiny with cottage cheese
Ultra-thin stuffed flatbreads you absolutely have to try! Khychiny—Caucasian filled flatbreads—are a favorite where I'm from. Here's my take: tender rounds stuffed with potato and cottage cheese. So good!

- Sift the flour into a bowl, pour in the kefir, add the baking soda and salt, and knead a soft dough. Roll the dough into a ball and slap it against the work surface for about 5 minutes (my kids love watching this part). It'll get even softer and more tender. Cover the dough with plastic wrap and let it "rest" for 20–30 minutes.
- Peel the garlic and grate it on a fine grater.
- Boil the potatoes until tender.
- Mix the cottage cheese with the hot potatoes and garlic and mash with a potato masher. Season with salt and stir the filling together.
- Divide the dough into equal-sized balls. Shape the filling into balls of the same size.
- Stretch a piece of dough into a round with your hands and add the filling. Pinch the edges shut.
- Flatten the filled round again with your hands, then finish with a rolling pin. Work very gently so you don't tear the delicate dough.
- Cook the flatbreads in a dry skillet (no oil) on both sides.
- Melt the butter and brush the hot khychiny on both sides.
