Chudu with cheese

Fragrant Dagestani stuffed flatbreads with cheese and herbs. Let's make them! Yesterday I just couldn't figure out what to make for dinner, but toward evening the idea of chudu came to me. Dinner was a huge hit! Chudu flatbreads are filling and soft, and all that onion makes the filling nice and juicy. They're made with unleavened dough and aren't much trouble to put together. The whole family loved them—I'll definitely be making them again!

  • Make the dough:
    • sift the flour into a bowl;
    • add salt, crack in the egg, and pour in the water;
    • knead an unleavened dough (it should be firm and elastic and not stick to your hands);
    • let the dough rest for 20 minutes.
  • Peel the onion, chop it finely, and sauté it in a mix of butter and vegetable oil until soft and translucent. Grate the cheese; rinse the dill, pat it dry with a paper towel (or rinse it ahead of time and let it dry), and chop it finely. Combine the cheese, dill, and onion, taste, and add salt as needed.
  • Divide the dough into 10 equal pieces and roll each into a thin round. Spread filling over one half of the round, fold the other half over the top, and press the edges firmly together. You can neaten the edge with a round dough cutter.
  • Cook the chudu in a hot skillet on both sides until lightly golden. Brush the hot flatbreads generously with melted butter and serve.
