Chicken Breast Nuggets
Chicken in a cheesy cracker crust — finger-licking good! Nuggets are a dish everyone knows and loves, and for good reason. There are all kinds of cooking methods and breading options: I both fry and bake them, and they always turn out delicious. You can also make a big batch ahead and stash some in the freezer — a real lifesaver when guests show up unannounced.

- Rinse and pat the chicken breasts dry, cover with plastic wrap (so you don't tear the fibers), and pound to about 1/2 inch (1 cm) thick. 2. Season both sides with salt and pepper, then cut into strips about 1/2–3/4 inch (1–1.5 cm) thick. 3. Pour the kefir into a deep bowl, add the chicken pieces, and let them marinate for an hour. 4. Meanwhile, crush the crackers into fine crumbs (my mom still uses a rolling pin; I use a blender). 5. Grate the cheese, mix it with the cracker crumbs, then add the Mediterranean herbs (any spices you like work too), paprika, pepper, and salt if the crackers weren't salted; stir to combine. 6. Roll the marinated chicken pieces in the crumb mixture on all sides and fry in vegetable oil, 2–3 minutes per side, until golden. Your crispy nuggets are ready — irresistible! Enjoy!
