Kutabs with Farmer Cheese and Herbs
A wonderful change from the usual turnovers — give them a try! Classic Azerbaijani kutabs are made with meat. I let my imagination run a little and decided to switch up the filling. The result was outstanding, with a flavor all its own — the turnovers vanished off the table in minutes. I recommend giving them a try; I think you'll love them.

- Rinse the herbs and pat them dry with a paper towel, or just let them sit on the cutting board to air-dry a bit. 2. Put the farmer cheese in a deep bowl and mash it with a fork, adding a pinch of salt and pepper. 3. Stir the herbs into the cheese. 4. Peel the garlic, press it, and add it to the filling. 5. Now make the dough: sift the flour into a deep bowl, add salt, and pour in the water and vegetable oil. Knead into a smooth, cooperative dough that doesn't stick to your hands. Cover with a towel and let it rest for 20–30 minutes. 6. Cut the dough into equal pieces and roll each one into a thin round. Spread filling over one half, fold the other half over, and pinch the edges shut. 7. Cook the kutabs in a dry skillet on both sides, no oil. You don't have to cook them all at once — do a batch and freeze the rest: lay them on parchment in a single layer, cover with more parchment, add a second layer, wrap in plastic, and freeze. Then you can whip up a great dinner whenever you need one. Serve the kutabs and enjoy!
