Farmer Cheese Kalachi

  • Crack the eggs into a deep bowl, add the sugar, and mash together with a fork or whisk. Pour in the vegetable oil, then add the farmer cheese, salt, and baking powder. Mix until smooth, then gradually work in the flour and knead into a dough. It should be very soft and elastic and shouldn't stick to your hands. Gather it into a ball and let it rest for half an hour. Roll the dough out about 1/4 to 1/2 inch (0.5–1 cm) thick. Dip a drinking glass in flour and use it to cut out rounds, then use something smaller (a shot glass or a bottle cap) to cut a hole in the center of each round. Pour the frying oil into a small deep saucepan, heat it over medium, and fry the kalachi a couple at a time, browning them on both sides. Transfer the finished kalachi to paper towels to drain the excess oil. Dust with powdered sugar and serve. Enjoy your tea!
