Azerbaijani Kutabs with Meat

An incredibly tasty dish from Azerbaijani cuisine! Kutabs are a bit like fried meat turnovers, but they differ in both taste and technique. The dough is thin, the filling is juicy — in a word, just delicious! I like to make a big batch of kutabs and freeze some. The ingredient amounts in this recipe are meant for exactly that. If you're not planning to freeze any, feel free to cut everything in half.

  • Start with the filling. Rinse the beef and cut it into chunks. Peel and wash the onion. Run the beef, onion, and lamb tail fat through a meat grinder. Season the ground mixture with salt and pepper and mix well (if it seems dry, add a splash of water — 1 to 2 tablespoons). While the filling rests, make the dough. It couldn't be simpler: sift the flour into a bowl, add the salt, pour in the water, and knead. The dough should be elastic and not stick to your hands. Divide it into portions and roll each into a log. Keep the pieces you're not working with covered with a towel. Cut each log into pieces and roll each one out thinly into a round. Spread filling over one half in an even layer, fold the other half over, and seal the edges firmly. Cook the kutabs in a dry skillet on both sides, then brush each one with butter and sprinkle with sumac. Serve the kutabs hot. So good!
