- Preheat the oven to 400°F (200°C). 2. Peel and mince the garlic. 3. Mix the garlic with the finely chopped thyme and rosemary. 4. Add the salt and pepper and mix again. 5. Wash and pat the loin dry with paper towels, then rub it all over with the herb mixture. 6. Place the meat in a baking dish fatty-side down and cook for 30 minutes. 7. Flip the loin and cook for another 20 minutes — one of the great things about loin is how quickly it cooks. 8. Turn off the oven, take out the dish, and let the meat rest for 10 minutes. Then slice it into portions and serve. Enjoy!
