Cornmeal Kefir Pancakes
Tasty, wholesome little pancakes — make them for breakfast and treat the family! Lately I always add cornmeal to my pancake or blini batter. It seems to make them so much tastier, and I have no doubt it makes them healthier too. Highly recommend!

- Pour the milk and water into a small saucepan, add a pinch of salt, and bring to a boil. 2. As soon as the liquid boils, stream in the cornmeal (or sift it straight into the pan through a small sieve), stirring the whole time. 3. Cook for 3 minutes, then turn off the heat and cover the pan. The mixture should swell up. Let it cool completely. 4. Crack the eggs into the cooked cornmeal, add the kefir, and mix thoroughly. 5. Sift the flour and stir it together with the sugar. Add this mixture to the rest of the ingredients and mix well, making sure there are no lumps. 6. Wash the apple, peel it, cut it in half, and core it. Grate it on the coarse side of a box grater. 7. Slake the baking soda with the vinegar and stir it into the batter, then add the grated apple. Mix everything well. 8. Stir in the oil. If the batter is too thin, add a little more flour — it should be about the consistency of thick sour cream. 9. Heat a skillet and cook the pancakes on both sides, spooning out one tablespoon of batter per pancake. You can cook them in a dry pan or one greased with oil; a dry pan gives you less greasy pancakes. Serve hot with sweetened condensed milk, jam, or sour cream. Enjoy!
