- Pour the water into a bowl. 2. Sift the flour. 3. Add half a cup of flour and the salt to the water and stir well. 4. Add the rest of the flour in small batches, kneading it into a dough. It should come together stiff. 5. Put the dough in a bowl, cover with a towel, and let it rest for 30 minutes. 6. Divide the dough into pieces and shape each one into a ball. Roll the balls out into fairly thin rounds about the diameter of the skillet you'll cook them in. 7. Heat the skillet well. There's no need to grease it — we're cooking these in a dry pan. 8. Cook the flatbreads on both sides (about 30 seconds per side). 9. Stack the finished flatbreads on a plate and cover with a towel. You can also brush them with melted butter, but I don't — I like the dry version. These flatbreads are great with both sweet and savory toppings; for example, I love them with pan-fried bacon (or chicken) and vegetables. They're also delicious with any jam and a glass of milk. Enjoy!
