Lamb Kebabs Marinated in Pomegranate Juice, Grilled

  • Cut the lamb into pieces and put it in a suitable container, pour in the pomegranate juice, and add the spices and onion. Mix and refrigerate. Marinate for 1.5–2 days, stirring occasionally. Add the salt only after the first 24 hours of marinating. — Chop the onion very finely so that when you mix it with the meat you can squeeze the juice out of it by hand. — I use bottled Azerbaijani pomegranate juice. Thread the marinated pieces onto the skewers snugly. If some pieces are especially fatty, you can put those on a separate skewer — trust me, once cooked, those fatty pieces will be the tastiest. While grilling over coals, keep a constant eye out so that rendered fat doesn't flare up on the hot coals. Any flare-ups from dripping fat should be doused immediately with small splashes of water (or beer, wine, or leftover marinade). Otherwise the kebabs will pick up a bitter, burnt-fat taste. Turn the skewers fairly often, too, so the fat doesn't render out too fast and the meat cooks more evenly. To check for doneness, cut into the largest pieces with a knife and look at how the inside is cooked. One more word of caution: don't wash these kebabs down with cold drinks, because lamb fat has a high melting point and can congeal in your digestive tract — in severe cases even leading to serious problems like an intestinal blockage. If you're thirsty after eating them, hot tea is a better choice than a cold soda. Enjoy!
