Kefir-Dough Potato Hand Pies Fried in a Skillet
Soft, homemade hand pies, hot off the skillet, just for you! Whenever I make these, I finally get the phrase "selling like hotcakes" — because these really do disappear in an instant! A couple of these little pies and a glass of kefir, and life is good, at least for tonight!

Step 1:
First, make the filling: here are the ingredients you'll need.

Boil the potatoes until tender.

Meanwhile, finely chop the onion and sauté it in vegetable oil until golden.

Don't forget to salt the potatoes partway through cooking.

While the potatoes cook, make the dough. Here are all the ingredients for it.

Add the baking soda to the room-temperature kefir.

Then the sugar.

And the salt.

Step 9:
Separately, beat the egg and mix it with the vegetable oil.

Now combine all the ingredients.

Knead the dough with a spoon.

The dough is ready — cover it with a towel and let it rest while you finish the filling. During this time the gluten in the flour relaxes, making the dough easy to work with.

By the time the dough is done, the potatoes are cooked! Drain the cooking water and add the sautéed onion.

Add the butter and mash the potatoes however you like — I use a regular potato masher.

Next, add the hot milk. You don't have to add milk to the filling, but it makes it more tender.

The filling is ready — set it aside to cool.

Now everything is ready to shape the pies.

Spoon a little dough onto the counter and either pat it out by hand or roll it with a rolling pin, whichever is easier. Then add the filling — keep in mind these pies hold quite a lot.

Pinch the edges shut, flatten the pie slightly with your hands, and set it seam-side down on the counter.

Fry the pies in a preheated skillet with vegetable oil. They cook quite fast — just 3–4 minutes per side.

Flip them and finish frying on the other side.
