Cooking method
Remove the steaks from the package, let the meat breathe for a few minutes on a cutting board until it acquires a pinkish hue and room temperature.
Put a cast-iron grill pan on the stove over high heat for 5-7 minutes.
Meanwhile, season the meat with pepper and salt on each side. Drizzle with olive oil. Roll the steaks well in pepper, salt and oil on a board. Preheat the oven to 180 degrees.
Steaks are sent to a hot frying pan and fried on each side for a minute and a half. We also fry steaks on the ribs. Do not add oil to the pan, it is enough of the fat that steaks emit when frying.
Cover the baking sheet with parchment, put the steaks on a baking sheet and send them to bake inside in a preheated oven for 10 minutes.
Put the finished steaks on a wooden serving board, decorate with rosemary sprigs and serve.
Wine and strong delicious alcohol go well with such steaks. Enjoy your meal!
