Marbled Beef Steak on a Grill Pan

  • Take the steaks out of their packaging and let the meat rest on a cutting board for a few minutes until it turns a rosy color and comes up to room temperature. Set a cast-iron grill pan over high heat to get screaming hot, about 5–7 minutes. Meanwhile, season both sides of the meat with pepper and salt. Drizzle with olive oil. Rub the steaks all over with the pepper, salt, and oil right on the board. Preheat the oven to 350°F (180°C). Lay the steaks on the hot pan and sear about a minute and a half per side. Sear the fatty edges too. Don't add any oil to the pan — the fat the steaks render is plenty. Line a baking sheet with parchment, place the steaks on it, and finish cooking them through in the preheated oven for 10 minutes. Transfer the finished steaks to a wooden serving board, garnish with rosemary sprigs, and serve. Wine and a good strong spirit pair well with these steaks. Enjoy!
