Cooking method

  1. Step 1:

    Step 1

Cut the ribs into individual portions.

  2. Step 2:

    Step 2

Heat vegetable oil in a skillet over high heat. Add the honey.

  3. Step 3:

    Step 3

Once the honey melts, lay in a layer of ribs and sear them on both sides until golden, about 1 minute per side.

  4. Step 4:

    Step 4

After searing, there will be almost no honey left in the pan, but there will be rendered fat from the ribs — fry the finely chopped onion in it.

  5. Step 5:

    Step 5

Peel the apple and chop it very finely.

  6. Step 6:

    Step 6

Put the glazed ribs in a saucepan and pour in the broth. Set the saucepan over low heat and simmer, covered, until the meat is done. This should take at least an hour and a half.

  7. Step 7:

    Step 7

Add the onion and apple to the saucepan, and season with salt and pepper.

  8. Step 8:

    Step 8

Add your favorite seasonings. One of my very favorites is Svan salt (a Georgian herb-and-spice blend). If you can find it, you won't be sorry!

  9. Step 9:

    Step 9

Stir. Continue to simmer for another hour.

  10. Step 10:

    Step 10

As it simmers, the apple should almost completely dissolve into the sauce. A few pieces may remain — that's fine. Once the sauce is smooth, remove the ribs and set them aside on a separate dish. Stir the cream into the sauce.

  11. Step 11:

    Step 11

    Add the flour.

  12. Step 12:

    Step 12

Cook for 10 minutes over low heat, then blend smooth with an immersion blender.

  13. Step 13:

    Step 13

Return the ribs to the sauce, bring it to a boil, and take it off the heat.

  14. Step 14:

    Step 14

Done! It's really delicious, if I do say so myself. Serve with mashed potatoes. Enjoy!
