Cooking method
Clean the fish, rinse and cut into pieces. Sprinkle with lemon juice, sprinkle with salt and pepper. Leave for 15 minutes.
Heat the oil in a deep frying pan, add the sliced carrot and the chopped light part of the leek. Fry over medium heat.
Put the pieces of fish to the vegetables, sprinkle with the zest of half a lemon and chopped basil, lightly fry for 8 minutes.
Pour a glass of tomato juice with the pulp, bring to a boil, reduce the heat, cover with a lid and then simmer for 5-7 minutes.
Serve with potatoes or rice.
