Cooking method

  1. Step 1:

    Step 1

Get your ingredients ready: rinse the meat, and peel and rinse the carrot and onion.

  2. Step 2:

    Step 2

Cut the meat into whatever size pieces you like.

  3. Step 3:

    Step 3

Sear it in a hot skillet with vegetable oil over high heat for 5 minutes, stirring after 3 minutes so it browns evenly.

  4. Step 4:

    Step 4

    Dice the onion as usual.

  5. Step 5:

    Step 5

Grate the carrot on the coarse side of a box grater.

  6. Step 6:

    Step 6

By now the meat has browned — you can see it's developed a nice golden crust, which keeps it juicier.

  7. Step 7:

    Step 7

Add the carrot and onion and let it braise over low heat for 10 minutes.

  8. Step 8:

    Step 8

After 10 minutes, stir in the tomato paste and sour cream.

  9. Step 9:

    Step 9

Press the garlic through a garlic press.

  10. Step 10:

    Step 10

Now it's time for the spices.

  11. Step 11:

    Step 11

    Add them to the skillet.

  12. Step 12:

    Step 12

Pour in the hot water and stir — the aroma is already amazing!

  13. Step 13:

    Step 13

    Season with salt.

  14. Step 14:

    Step 14

Braise over low heat for 1 hour, checking now and then so it doesn't scorch — though it usually won't, so you can pretty much forget about it for an hour.

  15. Step 15:

    Step 15

About 10 minutes before it's done, stir a little water into the flour until smooth so no lumps form, then add it to the pan.

  16. Step 16:

    Step 16

    Braise for another 10 minutes.

  17. Step 17:

    Step 17

Our meat in gravy is ready!

  18. Step 18:

    Step 18

It pairs perfectly with any side dish! Enjoy!
