- Here's a recipe for a simple, satisfying dish — salad with cheese and tomatoes. It's quick and easy to make. This salad suits anyone on a vegetarian diet as well as those counting calories. First, score a cross in the top of each tomato, scald them with boiling water, and immediately plunge them into cold water. Now peel off the skins. Cut the tomatoes into thin slices. Next, slice the cheese thinly and arrange it on a plate, alternating each piece of cheese with a tomato slice. Now chop the fresh basil and scatter it over the salad. Sprinkle the salad with vinegar and olive oil, and salt and pepper to taste. Extra-virgin (first cold-pressed) olive oil is best — it's more aromatic and much healthier. Finally, garnish the salad with a sprig of fresh basil. Now you can serve it. That's how you make a cheese and tomato salad. As you can see, it's all very simple and quick, but well worth it. Enjoy.
