Vegetable Salad with Cabbage, Carrot, Bell Pepper and Apples

A tasty, vitamin-packed salad from whatever's always on hand! The recipe I'm about to share comes together very quickly and easily, and the ingredients are always within reach. Not only is it delicious, healthy and easy, but there's also plenty of room for improvisation.

  • Here's how I make it. Take regular white cabbage and shred it finely. Then cut bell pepper into strips and add it — red or green, it makes no difference. Then grate the carrot, an apple (sour or sweet-tart varieties; be sure to peel it first), and the beet on a coarse grater. The beet gives the salad an interesting, attractive look. Don't forget to finely chop the onion too. Salt it, add sugar to taste, and vinegar (which you can replace with lemon juice) and sunflower oil. If you like, you can dress this salad with regular sour cream or mayonnaise instead — that's up to you. That's it. As you can see, it's all very quick and easy. You can serve this dish with any kasha, but personally I like it with potatoes. It also goes well with meat and fish — it's universal, really. I make this light vegetable salad almost every day in winter to enrich the table with vitamins.
