- The nice thing about salads is that you can serve them at the holiday table and also make them for yourself and your family on ordinary weekdays. I usually make salads with lots of ingredients, but there are times when guests show up out of the blue, or the family wants a cold appetizer — a salad — on the table late in the evening. There's no time to run to the store, of course, and that's when my mom's recipe for "Russian Beauty" salad (also known as "Abundance") comes to the rescue. Its main virtue is that it's easy to make from ingredients that are probably in every fridge any given day. So here's how to make this truly lifesaving salad. First, take the ham and cut it into strips. Grate the cheese on a medium grater. Cut the cucumber and tomatoes into strips too. Arrange all the salad ingredients separately on a platter, put mayonnaise, salt and pepper to taste in the center, and garnish with parsley or dill if you like. Toss the salad only just before serving.
