Oven-Baked Potatoes with Smoked Pork and Ramps
A delicious dinner ready in half an hour! My family isn't big on potatoes — they'd rather have porridge, beans, or pasta — but they always dig into these. And it comes together really fast. My husband and I work together, and we often get home from work needing dinner quick with no energy left. That's when this recipe for our favorite potatoes saves the day.

Step 1:
Scrub the potatoes well — don't peel them — and cut them into large wedges. Spread them on a baking sheet greased with vegetable oil. Cut the pork belly (mine was smoked) into cubes and add it to the potatoes. Season with salt and pepper to taste and put it in an oven preheated to 400°F (200°C) for 20 minutes. Watch your own oven.

Step 2:
Take the baking sheet out of the oven, toss the potatoes with a wooden spatula, and sprinkle with finely chopped ramps. Put it back in the oven for another 5–10 minutes.
