Savory Tomato Crêpe Bites "Little Logs"
This appetizer works for any occasion — it's simple and delicious! Maslenitsa (the Slavic pancake festival) is coming up soon, and I make these crêpes for that too. They're impressive enough to serve to guests.
Cooking method
-
Step 1:
Crack the eggs into a bowl, add salt and sugar, and beat. Pour in the tomato juice, add the flour, and beat until the lumps disappear. Then pour in the warm milk, add the vegetable oil, and mix well. Fry the crêpes on both sides.
-
Step 2:
Mash the cod liver with its oil (I drained off half) with a fork, then add the finely grated cheese and eggs and mix. Chill the filling in the fridge for 30 minutes. Trim the edges of the crêpes into squares. Set one on a plate and spread the filling over the surface.
-
Step 3:
Roll each one up. Cut the rolls into pieces about 1 inch (3 cm) thick. Arrange them on lettuce leaves and serve. Enjoy!
