- Clean the white mushrooms, cut them into wedges, and sauté in a skillet with oil. Add the porcini and cook everything until done. In a separate pan, fry the onion until golden, then stir it into the mushrooms. Pour in 1 cup of water and simmer until all the liquid has evaporated. Blend the whole mixture until smooth, then season with salt and spices to taste. At this point you can pack the mushroom pâté into sterilized jars and seal them. Put up this way, it'll be a treat on cold winter days.
