Chicken Fillet "Carbonade"
Here's a way to cook chicken so it tastes like pork carbonade—chicken that passes for pork. The name is no accident: this chicken has an uncanny resemblance to tender pork. Anyone who doesn't know what it's made from will never guess!
Cooking method

Step 1:
Cut the skinless chicken fillet into medium pieces, the way you'd normally cut pork.

Sprinkle with salt and spices (I used black pepper and sweet paprika), add the baking soda, and mix.

Squeeze in the juice of half a lemon. It'll foam and fizz! Let it sit for 10 minutes.

Then sprinkle with the cornstarch, mix, and let it rest for 15 minutes.

Then dredge each piece in flour.

And lay them out in a single layer in a skillet of hot oil right away.

Fry (uncovered!) on one side, then carefully flip each piece with a fork and fry the other side until golden and crisp. The pieces will puff up a bit and take on a juicy, meaty flavor.
