Here I suggest making cabbage fritters — a dish that's sure to please the whole family. Pull off the limp outer leaves from the head, cut out the core, and shred the cabbage finely. Then gently work it with a little salt and let it rest briefly so it releases its juices. If there's too much liquid, drain off the excess. Mix the cabbage with the egg, ground meat, flour, and herbs. Spoon the mixture onto a hot skillet and fry in vegetable oil on both sides until golden. Then let the fritters cook, covered, for about 15 minutes so the cabbage softens. If you like your cabbage on the crisp side, shorten the cooking time.
