Khychiny — Kefir Flatbreads with Meat and Herbs (Skillet)
Don't get hung up on the name — just make them and taste for yourself; they're a dream. Khychiny are impossible not to love: so delicious you can serve them on their own or as a bread alongside hot dishes. Dig in! Whenever I vacation in the Caucasus, I love buying these flatbreads. They come with all sorts of fillings, and every one of them is incredibly good. So now I make them at home for my own family.

- Make the dough by mixing the kefir with the flour, baking soda, and salt. The dough should be elastic and shouldn't stick to your hands. For the filling, use ground pork; season it with salt and pepper. Chop all the herbs and stir them into the meat. Mince the onion finely, add it to the meat, and mix everything together. Divide the dough into small rounds, about the size you'd use for hand pies. Place a tablespoon of filling in the center of each, then gather the dough up around it like a pouch so the filling is sealed inside. Roll the pouch out into a thin flatbread — as thin as you can so it cooks through well. Fry it in a heavy skillet greased with vegetable oil. I added about 20 g of oil at a time, worried they wouldn't cook through. Stack the finished khychiny on a plate and brush each one with melted butter. Eat them hot; if you have leftovers, set them back in an oiled skillet, cover, and warm for 8–10 minutes — they'll come out hot, golden, and fragrant. You can also make khychiny with potato and onion, or with cheese.
