Lenten Apple-Cinnamon Pancakes Baked in the Oven

You can enjoy these pancakes even during Lent! They're a real treat, even on a meatless fast. In our family we eat pancakes often, but during Lent you need a special recipe. So I decided to make my apple-cinnamon pancakes for my household during the fast, too — I experimented a little, and the result came out no worse than my old recipe. I'm sharing it for your approval.

  • Dissolve the salt and sugar in the water, add the sifted flour, and stir well until you have a smooth, lump-free batter. Add the baking soda and pour in the vegetable oil. Mix well. Heat a skillet, grease it with oil before cooking, and cook the pancakes. Brush each one with warmed honey. Grate the apples, add sugar, and cook them down over the heat; once they've cooled, stir in the cinnamon. Cut each pancake into 4 pieces. Top the pancake pieces with the cinnamon apples. Layer everything in a baking dish (I use a clay pot), drizzling honey between the layers, and bake in the oven for 1 hour or longer. That's it — enjoy, everyone!
