Braised Beans with Bell Pepper

One of the best bean dishes out there — knockout flavor, give it a try! And it's a breeze to make. This recipe is perfect for when guests turn up unexpectedly and there's nothing ready in the fridge. Beans with bell pepper make a hearty, delicious dish that comes together easily and disappears fast.

    Beans, bell peppers, onion, garlic.

    Cut the onion into small dice. You can also slice it into half-moons, but keep them very thin.

    Sauté the onion in oil until soft.

    Add the beans to the pan with the onion, pour in about a third of a cup of water, and simmer, stirring now and then.

    While the beans cook, rinse the bell peppers and remove the seeds. Cut the peppers into thin strips.

    Add the sliced peppers to the beans and simmer until the peppers are soft — about ten minutes. Five minutes before the end, add the minced garlic.

  • At the end of cooking you can add salt to taste — I don't, since canned beans are usually seasoned enough already. Also stir in the garlic, cut into large slices, right at the end. Beans with bell pepper make a great dish that's good served either hot or cold.
