Cooking method

    You'll need: beef, oranges, mustard, honey, sour cream, and vegetable oil. Stir the mustard together with the honey to make a marinade.

    Slice the beef against the grain and pound it lightly — you can even score it into a crosshatch with a knife.

    Coat the meat in the marinade and let it sit for at least 30 minutes — you can even leave it overnight.

    Peel the oranges and finely chop both the flesh and the zest.

    Quickly sear the beef in the vegetable oil so it stays juicy.

    Add the oranges and zest to the same oil the meat was cooked in, sauté briefly, then stir in the sour cream, season with salt, and simmer over low heat for 3 minutes.
