- Put the lard, veal, and finely chopped sautéed onion through a meat grinder, then all that's left is to season the mixture with salt and pepper, pour in a little water, and mix it all together. That's the mixture for these wonderful chopped veal steaks — a recipe a chef friend of mine shared, and her parties are always a feast for the palate. Shape the mixture into fairly large round patties, and heat the rendered pork fat in a skillet. Lay the patties in the pan and fry them over moderate heat until cooked through. Grate the hard cheese on a fine grater and melt it in the microwave. Transfer the steaks to a metal platter, spoon over the pan juices, and top with the melted cheese. I always like to serve these chopped veal steaks with a summer salad of sweet onion, tomatoes, and cucumbers, and a side of fried potatoes. Everyone loves them — the only catch is that frying them stirs up such a fierce appetite that you end up snacking along the way, because the wait is just unbearable. But that's the price of anything this good, and you learn to live with it. Wishing anyone "bon appétit" here is beside the point, except maybe out of politeness: everyone's appetite will be ravenous, even if they just ate.
