Shrimp Canapés on Skewers

On top of our usual family dinner, I wanted to make something a little special, and that turned out to be these shrimp canapés — a recipe I happened across in a magazine. - My parents came over to visit my husband and me yesterday, and they're huge fans of all kinds of seafood. On top of our usual family dinner I wanted to make something a little special, and that turned out to be these shrimp canapés — a recipe I stumbled on in a magazine. So here's how it's done. First, peel the shrimp, leaving the tails on, and devein them. Whisk a raw egg together with the starch, pepper, and salt, then add the shrimp and toss well so they're fully coated in the mixture. Trim the crusts off the bread slices and cut each in half. Set 1 shrimp on each half, pressing it lightly into the bread. Chop the hard-boiled yolk into small cubes and arrange them by the shrimp tails, then add a little sprig of parsley and an olive alongside. Heat the vegetable oil in a deep skillet and carefully lower in 3–4 of the shrimp toasts at a time. Wait until the bread turns golden and the shrimp are cooked, then lift them out and let the oil drain. Set them on a platter and stick a skewer in each. Once all the canapés are ready, serve them up!
