Chicken in Ginger Sauce

  • Cut the ginger into thin matchsticks, put it in a deep bowl, and cover it with cold water. Let it sit for 10 minutes, then drain. Rinse the chicken and cut it into small pieces.
  • Peel the onion and slice it into thin half-moons. Pour the vegetable oil into a skillet and set it over the heat. Once the oil is hot, brown the chicken pieces on all sides until golden — you can do this in two batches of 7–8 minutes each.
  • Transfer the fried chicken to a plate. In the same pan, sauté the sliced onion and the ginger until golden. Peel, rinse, and press (or finely chop) the garlic, add it in, and cook for about 5–6 minutes.
  • Pour in the vinegar and soy sauce and sprinkle in the sugar. Stir constantly until the sauce thickens. Return the chicken to the pan, mix well, and warm it through for a couple of minutes. Take the pan off the heat, add the chopped green onion, and stir thoroughly. The result is a wonderfully tasty dish fragrant with ginger — which, by the way, is very good for you. Serve the chicken in ginger sauce warm.
