- Sometimes you just want to surprise your family with something unusual and delicious. A friend passed along this recipe for Mexican-style chicken. Tomatoes, corn, and chili come together perfectly here, and they pair beautifully with the browned chicken. I recommend it to everyone — it makes for the tastiest chicken. Take the chicken thighs and fry them over medium heat until golden, then lift them out of the pan. In the same oil, sauté the chopped onion and garlic cloves until soft, about 4 minutes. Stir in the sea salt, chili pepper, and dried cilantro. Add the finely chopped, peeled tomatoes. Return the chicken to the pan and simmer for another 20 minutes. Finally, add the frozen corn and cook for about 5 minutes more. Season with salt to taste. The Mexican-style chicken is ready — serve it with hot cooked rice. Enjoy!
