- In the East, people love lamb and really know how to cook it — it takes real skill and a love of the craft. Done right, Kazakh recipes turn lamb into something wonderful. Here's one called Kazakh-style basturma. Take lamb — the loin and hind leg work best — and cut it so you have 2 pieces per serving, each one shaped like a ribbon. Pound them lightly, then season with salt and pepper to taste. Slice the onion (I usually cut it into rings) and add it to the meat. Pour the vinegar over everything and set the container in a cold place to marinate for at least 4 hours. Take a strip of meat, lay some of the marinated onion down the middle along with tomato (fresh if you have it, otherwise pickled works too), and roll the meat up into a tube. Thread a skewer with a slice of tomato, then the rolled meat tube, then another slice of tomato. Grill the skewers over coals, basting them with the fat as they cook. Figure two skewers per serving. Serve topped with chopped green onion. Enjoy!
