Salad with Boiled Sausage, Cheese, and Cucumber
Quick and tasty, made from simple ingredients, bright and appetizing! This salad with sausage, cheese, and cucumber could easily be called a "five-minute" recipe — that's exactly how long it takes to put together. And yet it's just as fitting for a holiday table as it is for a family dinner. For a little variety, you can swap the boiled sausage for smoked.
Cooking method
-
Step 1:
How do you make a salad with sausage, cheese, and cucumber? Gather the ingredients. Hard-boil the eggs ahead of time. You'll want them cold for the salad, so as soon as they're cooked, drop them straight into a bowl of ice water. This speeds up the cooling and makes them easier to peel.
-
Step 2:
Cut the boiled sausage into thin strips. You can use absolutely any sausage — even chicken, for a lighter option — but it's best to avoid sausage with a lot of fat, as it will make the salad taste worse.
-
Step 3:
It's best to build this salad in layers and serve it in individual bowls — it looks prettier that way, and every guest is sure to get all of the ingredients. Spread a layer of boiled sausage across the bottom of the bowl and brush it with mayonnaise. You can also swap the mayonnaise for another sauce, or a blend of sour cream and mayonnaise. Salt the salad if you like, though the mayonnaise already adds plenty.
-
Step 4:
Peel the boiled eggs. Separate the whites from the yolks. Grate the whites on a coarse grater and add them as the second layer in the bowl. Brush with a thin layer of mayonnaise.
-
Step 5:
Next comes the fresh cucumber. Wash the cucumbers and cut them into strips. Add the cucumbers to the bowl. You can lightly salt them, since we won't be brushing mayonnaise on top of this layer.
-
Step 6:
Crumble the boiled egg yolks into fine pieces and scatter them over the cucumber in the bowl. Brush with mayonnaise.
-
Step 7:
Grate the hard cheese on a fine grater. Sprinkle the cheese shavings generously over the salad so they completely cover the previous layer. Finish by scattering chopped green onion over the top. It not only makes the salad brighter and more attractive, but also nicely sets off its flavor. Enjoy your meal!
- A very simple salad that comes to the rescue when you need to put something together quickly. You can change up the ingredients and add whatever you happen to have in the fridge. Experiment, and enjoy a new flavor every time!
- It's best to make the mayonnaise yourself — it'll be tastier and healthier. Look for some interesting homemade mayonnaise recipes here. You can also use sour cream or plain yogurt as a dressing instead of mayonnaise, either on their own or mixed with mayonnaise in whatever proportion you like — this will cut down the dish's calorie count.
- Always wash the eggs before using them, since even a shell that looks clean can harbor harmful bacteria. It's best to use a food-safe detergent and a brush.
