Waffle Rolls with Boiled Condensed Milk

Back in Soviet times, once electric waffle irons appeared, home cooks often began treating their kids to this simple sweet made from inexpensive ingredients.

Step 1:
How do you make waffle rolls with boiled condensed milk? Gather the ingredients. This treat is admittedly quite rich, but every now and then it's nice to indulge yourself and your family. You can use butter instead of margarine for a less indulgent version, but margarine bakes up just as well and is more budget-friendly.

Crack the eggs into a deep bowl. Add the sugar. Using a whisk or mixer, beat the ingredients until smooth and even — you don't want a thick foam, just to make sure the egg whites are fully blended in.

How do you make the waffle batter? Melt the margarine over a water bath or in the microwave, then let it cool to room temperature so it doesn't curdle the eggs when combined. Pour the melted margarine into the egg mixture. Stir again.

Sift the wheat flour — don't skip this step. Flour should always be sifted through a sieve to remove any tiny foreign particles and to aerate it, which in turn makes for better baking. Add the flour to the bowl of liquid in small batches, stirring the mixture each time.

You can buy boiled condensed milk at the store, or make it yourself by simmering an unopened can in a pot of water — 3 hours over moderate heat is enough. Let the condensed milk cool in the can, and only then open it. Fill the rolls with the condensed milk using a teaspoon or a piping syringe. The treat is ready. Serve it with tea, coffee, or cocoa.
