Simple Yeast-Dough Belyashi (Fried Meat Pies)
No good way to grab a tasty bite at work? This recipe has you covered! The recipe for belyashi with meat is one of the very first in my notebook. It makes a great lunch for anyone who can't get to a cafeteria or café. A belyash is meat and dough — and there are all sorts of ways to make it. This version (option 3) uses beef.

- As in the previous two recipes, start with a yeast dough. Dissolve the yeast in warm water and stir in the sugar (no salt needed in this one). Add the flour last and knead the dough. Set it aside in its own spot, cover it with a towel, and let it rise. Meanwhile, make the filling: grind the fatty beef through the coarse plate of a meat grinder, and run the onion and fat through with it. Mix everything well, season with salt and pepper, and add a little water — it makes the filling juicier. Once the dough has risen, punch it down and cut it into pieces. Roll each piece into a thin round, add the filling, and gather the edges, leaving a small opening in the center. Fry the belyashi in a deep, heavy-bottomed skillet: add the fat, melt it, and get it hot first. Fry each belyash open-side down first, then flip it. Enjoy!
