- Hearty potato pockets stuffed with cheese and chicken and pan-fried in oil — they're absolutely delicious! My Polish friends once served me these, and of course I got the recipe from them and made them myself. My advice: make a big batch right away, because they vanish off the plate fast! Here's how I do it: boil the potatoes in their skins, peel them, and mash as you would for mashed potatoes. Add the wheat flour, one egg, and salt to taste. Knead into a dough, roll it into three small logs, and cut them into equal pieces. Flatten each piece and shape it into a round. For the filling, slice the hard cheese and cut the cooked chicken breast into strips. Set the filling on the rounds and crimp them shut neatly. Now take a deep skillet, pour in the sunflower oil, heat it well, and fry the pockets on both sides. Serve them as soon as they're done, drizzled with melted butter that you can first mix with breadcrumbs.
