Such a dish as grilled fish will appeal to gourmets. It's quite expensive for our family to eat it every day. But on holidays we do it all the time. I learned this recipe from a friend who lives in Estonia. Almost all Estonian housewives revere fish. Grilled salmon with eggplant is not the only dish in their cookbook. They also prepare food from herring, flounder, perch and sprat.
Now we are going to prepare a dish called "Grilled salmon with eggplant".
To do this, you need to take four pieces of salmon. Season them with salt and pepper. Leave to soak for a while. I usually leave the fish for one hour.
During this time, cut eggplant into circles. Put them on the paper that you use to bake pies in the oven. Sprinkle them with sea salt. In Estonia, such salt is sold everywhere. If you can't buy it in your city, use ordinary salt. So they should lie down for one hour. Under the action of salt, all the bitterness will come out of the eggplant. Then take each individual piece of eggplant and spread it with olive oil, moved with chopped garlic. Put the salmon and eggplant on the grill, and soak until tender.
