- Here's an unusual dish that works as either an appetizer or a main course. This recipe for spiced lamb with dill and spinach comes from Greece, home to some of the most original and delicious food anywhere, and it will really dress up and liven up a holiday table. First, make the marinade for the meat: in a bowl or a large plate, combine the finely chopped garlic, oregano, cloves, cinnamon, black pepper, allspice, and salt, then pour in the olive oil and mix thoroughly. Cut the lamb into serving pieces and pound them lightly. Toss the meat pieces in the marinade and set them to grill over coals. While the lamb cooks, heat some oil in a skillet and sauté the spinach for 3–5 minutes, until it wilts. Add the dill, yogurt, and lemon juice to the spinach. Stirring, bring the mixture to very hot but not boiling, then season with salt and pepper. Once the lamb is grilled, serve it with the sauce. Your spiced lamb with dill and spinach is ready. Enjoy!
