  • This dish, popular in so many countries, is a favorite in Greece too. Every country has its own way of making kebabs, and Greece is no exception — here's the Greek take: souvlaki. Above all, you'll want fresh lamb tenderloin. If you can't get lamb, no worries — you'll still make a great kebab, just not a Greek one. Start your prep the evening before. First, cut the lamb into pieces and place them in a bowl to marinate. Add a couple of tablespoons of olive oil, the lemon juice and zest, the wine, chopped garlic, and oregano. Season with a little salt, pepper, and the bay leaves. Mix everything well and refrigerate overnight. The next day, blend the yogurt with garlic (a blender works great) and let it sit. Thread the lamb pieces onto skewers and grill them until done, brushing with olive oil as they cook. Serve the lamb souvlaki with the yogurt sauce.
