- Who doesn't love pancakes? In Belarus, they make them their own way. There's one lovely recipe called "nalistniki with cottage cheese," and in our house this dish disappears faster than the best homemade cake. Nalistniki are very thin crêpes that get rolled into tubes, then dotted with butter and gently baked in the oven. Let's get started. First, sift the flour. Add the salt and sugar and mix well. In a separate bowl, pour warm milk, then whisk in one egg and the vegetable oil. Combine the two — the flour mixture and the milk mixture — and whisk into a smooth batter. Let it rest for 2 hours, then stir in a little water. Fry the crêpes over medium heat in a pan greased with unsalted lard. While the batter rests, make the filling: whisk the cottage cheese, sugar, and eggs together until creamy. If you like vanilla, add a little now. Spoon a tablespoon of filling into the center of each crêpe and spread it out, then roll the crêpe into a tube. Arrange all the rolled crêpes in a baking dish, tucking pieces of butter between them, and sprinkle generously with sugar. Heat the oven to 120°F (50°C) and let them warm through for 2–3 hours.
