  • A friend once served me these apple fritters, and I remember jotting the recipe down on a scrap of paper — it was that simple, and the apples were unusually good. I recently came across the note and decided to treat myself. The key here is soft apples, by which I mean ones that aren't tannic (late-season tart or sweet-tart varieties often are); use apples that soften quickly when cooked. Peel the apples, slice them into rings, and remove the cores. Make the batter — it should be about the consistency of pancake batter. Separate the whites from the yolks. Beat the yolks with the sugar, add the sour cream, and mix well; pour in the milk, mix again, add the flour, and stir until smooth with no lumps. In a separate bowl, whip the whites to soft peaks and fold them into the batter. Heat a generous amount of sunflower oil in a skillet. Dip the apple rings in the batter by hand and lower them into the hot oil, frying on both sides like fritters. Serve with sour cream, and dust with powdered sugar if you like. Enjoy!
