  • Here's another recipe for a wonderful Italian dish: sweet pepper and tuna rolls. It's sure to please any fan of Italian cooking. To start, roast the whole peppers over coals or on skewers. Once the skins blister and char a bit, pull them off the heat. Let the peppers cool for about five minutes, then cut them into quarters and remove the seeds and everything inside. Next, pour the lemon juice and olive oil over the tuna and mix well, so the fish soaks up the juice and breaks up a little. Finely chop the garlic, parsley, and celery, and combine them in a separate bowl — that's your filling. Stir in the pre-chopped olives, and of course season with salt and pepper. Lay the pepper quarters out and spoon filling onto each one. Roll each stuffed pepper quarter up into a little roll. Chill the rolls in the fridge for an hour. Once they're cold, they're ready to plate and serve.
