Fried Potatoes with Oyster Mushrooms

Cooking method

    Peel and chop the onion fairly fine.

    Wash and cut the oyster mushrooms into medium-sized pieces.

    Heat about a third of the oil in a skillet.

    Add the onion and cook, stirring, until translucent.

    Add the mushrooms.

    Cook the mushrooms and onion uncovered, stirring, until the liquid evaporates. Season with salt and both peppers to taste. Add just a pinch of the red pepper — it really makes this sauce.

    Add the sour cream, stir, cover, and simmer for 10 minutes. Then set it aside and let it rest for 15 minutes.

    Peel the potatoes and cut them into thin strips.

    Cover them with cold water for 15 minutes to rinse out the starch.

    Pat the potatoes dry with a paper towel.

    Heat plenty of oil in a skillet. Peel and crush a garlic clove. Add the garlic and rosemary to the oil and heat for 2 minutes, then remove them — this is to flavor the oil.

    Add the potatoes to the hot oil and fry over high heat for the first 5 minutes. Then lower the heat, stir, and cook, stirring occasionally, for about 30 minutes.
