Fried Zucchini with Egg Yolk and Grated Cheese
A simple but tasty dish for a hearty breakfast. It takes about 10 minutes. The number of servings depends on how much zucchini you use.

- Wash the zucchini and slice it into very thin rounds (one medium zucchini gives me two skilletfuls). Dredge the rounds lightly in flour and fry them on both sides in a preheated, oiled skillet over medium heat. (I don't like them underdone, but I don't like them burnt either, so I fry mine just lightly — but that's a matter of taste.) While you're busy with the zucchini (washing, slicing, and frying), hard-boil the eggs on a nearby burner: once the water comes to a boil, cook them for another 4 minutes, then turn off the heat and cool them under cold running water. Arrange the fried zucchini nicely on a flat plate. Peel the eggs, cut them lengthwise, and remove the yolks. In a separate bowl, mash the yolks with a fork together with salt and mayonnaise. Spread a little of this mixture on each zucchini round, then top generously with coarsely grated cheese. Your dish is ready — dig in. Enjoy!
