Step-by-step cooking
Step 1:
For the filling, cook the beef in boiling water with carrots, onions and bay leaf. Cool, strain the broth. Finely chop the meat.
Step 2:
For the dough, mix all the ingredients with 240 ml of warm water in a bowl until smooth, knead the dough quickly. Cover the dough with cling film and refrigerate for 1 hour.
Step 3:
Peel the eggplant, cut into small cubes. Also chop onions and mushrooms. Fry the eggplants until golden brown. Put the eggplants in a bowl. Fry the mushrooms in oil until half cooked, add the onion and fry until the vegetables are ready. At the end, add eggplants.

Add the chopped meat to the vegetables, add salt and pepper to taste, pour in a little broth, stir, and simmer on low heat for 10 minutes. Cool it down.
Step 6:
Divide the dough into equal-sized pieces, roll out into circles with a diameter of about 10 cm, put the filling in the center, make round pies.
Step 7:
Fry the pies in hot oil on both sides until golden brown.
Step 8:
Before serving, put the pies on paper towels to drain excess fat. Serve the pies warm. Bon appetit!
