Fried Smelt
Craving some crispy fried fish? Smelt is the best choice! Smelt season has begun! The whole culinary capital has moved to St. Petersburg! I knew right away that smelt is St. Petersburg's signature dish the moment I saw heaps of this fragrant little fish on every corner at the end of April. Here's a ridiculously simple recipe for it — I'll share the secret a little later.

Cooking method

Step 1:
Gather the few ingredients you'll need — there aren't many.

Beat the eggs into an egg wash.

Rinse the smelt and remove the gills and innards through the opening near the head. Salt them and chill for 20 minutes.

Dip each fish in the egg.

Then dredge it in flour.

And fry in a well-heated skillet.
