Dargin Chudu with Green Onion and Potato

These stuffed potato flatbreads come together fast! Dargin chudu with green onion and potato is an incredibly tasty, fragrant dish from Dagestan. The dough is made with kefir and baking soda, so you can start pan-frying as soon as the flatbreads are shaped. Be sure to brush them with real butter, not margarine — it gives the finished chudu a tender crumb and rich aroma. Serve them warm with hot drinks, or alongside soup in place of bread.

    Knead a stiff dough. Let it rest while you make the filling.

    Peel the potatoes and mash them with a fork.
