How do you make fritters with a surprise inside? Here's my method: pour 250 grams (about 1 cup) of buttermilk into the bowl you'll mix the batter in. Add 1/2 teaspoon of baking soda, leveled off. Stir the buttermilk and soda together well and let it sit for 2 to 3 minutes so the reaction can start. Now add 1 egg, the salt, and the sugar. Stir everything thoroughly until the mixture is smooth.
