Lard Fritters Stewed with Tomato and Herbs
Tender, hearty little fritters for true lard lovers! A simple recipe for a genuinely offbeat dish — one I bet a lot of us have never even heard of. I'm sure that once you actually try it, you'll join the ranks of its fans, especially if you love lard!

Step 1:
Gather the ingredients called for in the recipe.

Cut the bread into large pieces, put it in a bowl, and pour the milk over it. Let it sit for a while to soak thoroughly. For this recipe you can — and really should — use bread that's not perfectly fresh, like yesterday's.

While the bread soaks, turn to the lard — our star ingredient. Cut it into large pieces.

Then run the lard and the lightly squeezed bread through a meat grinder, alternating between the two.

Wash the lemon well and grate the zest on the fine holes of a grater.

Combine everything you've prepared for the mixture: the ground lard and bread, plus the lemon zest. Season with salt and pepper to taste and mix well.

Shape the mixture into fritters and dredge them in flour.

Fry them in vegetable oil over medium heat until golden brown on both sides.

Chop the herbs and cut the tomato into small cubes. Sprinkle the fried fritters with basil and oregano and add the tomato.

Stew the dish over low heat for 8 to 10 minutes with the lid on. Now you know how to make meatless fritters from lard — and it's pretty easy!
