Yeasted Milk Flatbreads

Soft, golden, fresh-off-the-pan flatbreads... What could be better? There's always room for them on the table—eat them in place of bread with a bowl of soup, or pile any filling you like on one half (cheese, chicken, meat, veggies), fold it over, and you've got a burrito-style wrap. They make a wonderful breakfast, and you can make them ahead to take along on a picnic. Best of all, they're easy to pull together whenever you have flour and milk on hand.

Cooking method

    Dissolve the dry yeast in the milk along with the sugar.

    ...then finish by hand. The dough comes out smooth, elastic, and fairly sticky.

    Cover with a towel and let it rise in a warm spot for 1 hour.

    After an hour the dough has risen nicely.

    Divide it into 7 equal pieces.

    Stretch each piece by hand or roll it out with a rolling pin into a round the size of your skillet.

    Fry in a skillet with a little vegetable oil until golden.

    Flip and finish frying on the other side.
